Fall Recipe Challenge: Peppermint Truffles

This was the first year I've tried my hand at truffles, though, now that I think about it, the buckeyes and chocolate delights I've made for years would probably fall under the "truffle" category. These were pretty easy to make and were one of the first items to disappear off the cookie platters with requests for more. Definitely a delicious festive treat!



Peppermint Truffles

12 oz. white chocolate
4 oz. red or pink candy melts
1/2 cup heavy cream
1/8 tsp peppermint extract
1/8 tsp vanilla extract
4 oz. semi-sweet chocolate
12ish candy canes

In medium bowl over pan of boiling water over medium low heat (or you can just use a double boiler!), combine 12 oz. white chocolate, red/pink candy melts, and heavy cream. Stir until completely melted and smooth. Remove from heat and add peppermint and vanilla extracts. Stir to incorporate and refrigerate bowl for at least 4 hours. Once properly chilled, roll tsp of truffle filling into balls. Place formed balls onto wax paper lined baking sheet and place in freezer. While peppermint balls are chilling, crush the candy canes, place in small bowl and set aside. Melt semi-sweet chocolate until smooth. Remove truffles from freezer, roll to make sure evenness then dip into chocolate and then into crushed candies. Place finished truffle back onto wax paper lined baking tray and repeat with remaining truffles. Let stand for 1 hour or until completely dry.

Oh, those look wonderful! I'm a big fan of peppermint stuff this year - maybe I'll give them a try on Christmas Eve, if I have time!
