A Success!

Well, the surprise party was a success! It was a party for my mom and required a lot of complicated orchestrating and last minute preparations. We made a ton of food but the favorites were the peanut butter dip and the cookie dough dip! I even managed to snap a couple of photos before the guest of honor made her appearance!




Both dips are out of this world, back in the day we actually made and had them served at our wedding!

Creamy Peanut Butter Dip
Ingredients:
½ cup creamy peanut butter
8 oz. vanilla yogurt
½ tsp. cinnamon
½ cup cool whip

Directions:
Mix peanut butter, yogurt and cinnamon together. Using whisk, gently stir cool whip into peanut butter mixture until just blended. I garnished the dip with cinnamon chips. You can serve it with apples, pears and strawberries for dipping (I stuck to apples since they are so abundant right now).


Chocolate Chip Cookie Dough Dip
Ingredients:
1/2 cup butter (1 stick)
1/3 cup brown sugar
1 tsp. vanilla extract
1 (8 oz.) package cream cheese, softened
1/2 cup powdered sugar
3/4 cup mini semi-sweet chocolate chips

Directions:
1. Melt butter and brown sugar over medium heat in small sauce pan. Stir continuously until the brown sugar dissolves. Remove from heat and whisk in vanilla extract. Set aside to cool (I only cooled the butter for about 5 minutes before pouring it in). Beat the cream cheese and powdered sugar for 1 minute. Slowly beat in the cooled butter/brown sugar mixture. Beat for an additional minute. Stir in the chocolate chips (I saved a handful to garnish the top with). Pour mixture into serving bowl and refrigerate. The mixture will be pretty soft and liquid-y but I chilled it for awhile and set it out approximately 15-20 minutes before serving it. I served the dip with vanilla wafers, brown sugar cinnamon ritz crackers and the new fudgie oreo dippables. I think graham crackers would be delicious too!


I hope ya'll don't think this is a super lame post but I came down with ANOTHER flu Saturday night and am doing my best to kick its butt. I even had to miss the hubby's hockey game Sunday night. :( I also had a dental appointment today that could have gone a lot better (darn wisdom tooth that was never supposed to make an appearance!) In more happy news, I got the first cd of my boudoir photos back! There are several hundred so I'm in the process of sorting through and picking out the most appropriate ones...aka the ones I don't mind being readily available on the internet. I'm hoping to get it done in the next couple of days but I'll be sure to label it clearly for those of you who might check my blog from work (just in case). None of them are trashy or scandalous but I know different companies have different policies and ideas of what's appropriate.

Let me know if you guys try the dips and what you think! People went CRAZY over the cookie dough one, I literally hadn't even set it down on the table before the vultures descended on it from all sides. The dip was wiped out in a matter of minutes. It doesn't make a huge batch but you don't need a lot per serving either. However, since the guest of honor was an hour and a half late to her own party, people needed something to occupy the time, aka, eat!
